Marinated Chicken Breast
High Power Bob on the keyboard here again. Sally says that she is almost embarrassed to give this one out, because it is so simple. Well, it is also sooo good. Jim and Sally cooked for the RBA Nationals Match at Ridgeville and the Marinated Chicken Breast Sandwiches were a rousing success, far outselling the regular hamburgers and hot dogs.
Start with boneless, skinned chicken breast halves (Sam’s Wholesale). Use a hefty size ziplock bag and cover the breasts with “Kikkoman’s” Teriyaki Marinade & Sauce. Keep in the fridge, turning several times, at least overnight but a whole day is better.
Remove the breasts from the bag and cook on a charcoal grill paying attention to not overcook. Use fresh Teriyaki as a baste while cooking and as always, salt and pepper to your tastes.
